Breakfast at Boma was fantastic. There were a few vegan options on the buffet, but the highlights were definitely what the chef brought out for us.
The chef made us a tofu scramble with lots, and I mean lots, of veggies. My only request was nothing spicy and no peppers at all (including bell). So our scramble included spinach, mushrooms, broccolini (a highlight!), and asparagus. It was well seasoned and well cooked. Perfect scramble!
Along with our scramble came 4 Mickey waffles made with the allergy-friendly mix. They were so good. Not dry at all like waffles can be. They were ever so slightly crispy on the outside and moist on the inside. They were so good, we (just two of us) asked for another helping and got 4 more!
Since none of the pastry items on the buffet are vegan, the chef brought us a plate of Babycakes mini brownies (!) and a variety of the vegan cookies (chocolate, chocolate chip, and snickerdoodle). Wow!
There was a surprising number of vegan options on the buffet, but none of them as impressive as what the chef brought us.
This whole table was vegan: Grilled Asparagus, Chakalaka (spicy stewed tomatoes and onions), Pap (creamy white cornmeal porridge), and Grilled Tomatoes.
The roasted potatoes were vegan
This station was vegan; quinoa and oatmeal
Lots of fruit, etc
On the buffet, a lot of the flavors were very similar; lots of repeated spices and flavors, so I got tired of everything on the buffet pretty quickly. But I didn’t mind, because our tofu scramble, Mickey waffles, and dessert were fabulous!
